A Good Use for Zucchini
We complain for the first month or two of Boise's farmers' market that there's no fresh produce. But come July, there are so many great finds to choose from. Even though it was going to be over 100 degrees, I had decided yesterday in the morning that I was going to purchase a zucchini at the market to make bread. I searched through many of the cookbooks not yet used, and I came across a spicy zucchini bread recipe in Art Smith's "Back to the Table" cookbook, which I had received several years ago as a gift. The Spicy Zucchini Quick Bread was fairly quick, done in a bundt pan, but not as spicy as I would have liked. I used pumpkin pie spice, but I think I should have gone with the Chinese five-spice for the extra kick. —CS
